After all that growing your own, what do you do with so many tomatoes, peas and courgettes - trust me, people won't take them off your hands even when free!

Here are key techniques you can use to preserve and store your glut to maximise their longevity as well as lots of tasty seasonal recipes to try with the family.  In addition, we wish to promote home cooking and reduce kitchen waste.

Chicken & Bacon Cheesey Pasta

Serves 4

Cost: £1.80 per person

Cooking:

Bring pasta to boil and continue to cook until soft.  Add seasoning to taste

Add a teaspoon of oil in to a seperate cooking pot over a medium heat

Add chopped onion and grated garlic to the oil

Gently cook until slightly golden

Add chopped bacon and gently heat until the bacon is slightly crispy

Add the diced chicken and continue to cook until chicken is golden brown.  Add seasoning to taste

Ingredients:

  • 400g Chicken Fillet
  • 3 Rashers Bacon
  • 450g Fusilli Pasta
  • One medium Brown Onion
  • 4 Garlic Cloves
  • 2 Cans of Chunky Chopped Tomatoes (400g per can)
  • 400ml Coconut Milk
  • 400g Cheddar Cheese
  • Garlic Bread Bagette

 

Once the pasta is cooked, drain and then add to the cooked meat

Add chopped tomatoes and coconut milk 

Stir until eveything is evenly mixed throughout

Layer the grated cheese over the top of the pasta and reduce the heat and leave to simmer.  The sauce will bubble allowing the cheese to melt and ooze into the pasta mix

While the pasta is simmering, add your garlic bread to the air fryer.  I like to air fry at 180C for 12 mins.  Half way through cooking, I cut the bagette into slices to allow the butter to melt into each piece

Once the garlic bread is cooked, serve and enjoy!
